May 2010 - Salad of Smoked Duck
Now that summer is well under way it’s time to think about lighter dishes once more and my recipe for you this month fits the bill perfectly. 

April 2010 - Warm Salad of Seared King Scallops
My recipe this month is a Warm salad of seared king scallops, Poached rhubarb, with Citrus vanilla dressing - this is a real favourite of ours in the kitchen.

March 2010 - Chargrilled Minute Steak 
Not surprisingly, there’s a Mediterranean twist to my cooking at The Olive Branch and Red Lion pubs. I love the culture and the way people in southern Europe eat fresh, colourful food. So here goes with a great quick and easy alternative to steak and chips

December 2009 - Roast Goose
Why not try a goose instead of the traditional turkey this year for Christmas to ring the changes.  A traditional bird creates a sense of occasion and goose for Christmas dinner can quickly become an established practice at this festive time of year.

September 2009 - Baked Apple, cinnamon clotted cream
Autumn is the time of year to indulge in delicious local apples. Branches are heavily laden with ripened fruit about now so the timing is perfect for this baked apple dessert...

August 2009 - Twice baked Crab Souffle
This month I have chosen to feature my recipe for Twice-baked Crab Soufflé with Waldorf salad as August delivers us fantastic shellfish, and sparks nostalgic memories for me of the Norfolk coast.

June 2009 - Panfried Fillet of Wild Salmon
A great British classic, with locally grown, asparagus, peas and new potatoes.

April 2009 - Pork Faggots
This is a ‘back-to-basics’ dish is the one I used in the 'cook-off' against the Hairy Bikers for there forthcoming BBC2 television series. It utilises cheaper cuts of meat and other ingredients, all still freshly sourced from local suppliers wherever possible.

March 2009 - Shallot Tatin
My recipe this month is Shallot Tatin – a glorious dish that is just right for any spring days that still have a hint of winter about them.

February 2009 - Kipper Pate
As we are now heading towards the end of winter and into the new and lovely early spring season, my recipe this month is smoked kipper pâté, lemon pickle, melba toast. This dish makes a wonderful light lunch on its own or it can be used as a starter for a more elaborate meal.

December 2008 - Sean's Christmas Pudding
I love this time of year in the run-up to Christmas and have chosen to share with you this month my very own recipe for Christmas Pudding.

For me, the greatest excitement each day is seeing what produce comes through the door and then deciding what dishes to make with it all for my pub menus!

August 2008 - Grilled Lamb Chops, pea & mint risotto
This is just the perfect dish to sit back and relax over in the hazy hot days of summer that we hope we’re going to be enjoying. It’s great to eat it alfresco-style or if we have a true, British type summer, wet and miserable, it will lend comfort and contentment to a miserable situation.

July 2008 - Strawberry Treacle Tart
This month’s recipe is for Olive Branch Strawberry Treacle Tart with Strawberry Ripple Ice Cream which celebrates the best tastes of British summertime – a simple dish but a very special one that will be popular with all the family.

June 2008 - Eggs Benedict, Smoked Salmon Hollandaise & Abbey Park Farms Asparagus
This month I am using two of Britains greatest foods - Asparagus and Smoked Salmon. We smoke our salmon at both our pubs and get wonderful asparagus from Abbey Parks Farm in Boston (see 'Our Suppliers' page).

May 2008 - Crispy Goat's Cheese Parcels
Sean's recipe this month is perfect for these first warm and sunny days of early summer, using Goats Cheese made by Vivien Hall of Skylark Hill Goats in Cropwell Bishop, and a wonderful walnut dressing using local honey from Bob Halsey at Colsterworth Honey Farm.

April 2008 - Mushroom & Lincolnshire Poacher Rarebit
Welcome to my first food column, my intention is to bring you a range of dishes that can be prepared at home and use locally sourced produce. My first recipe uses Lincolnshire Poacher produced by Simon and Tim Jones in Alford and available at all local farmers markets (see link in our 'Pub Shop' section) an a wonderful bread from Mick Smith at King's Road Bakery in Melton Mowbray.
